Elaine Bapis has collaborated with Valter for over five years, "typing" while he talks, paying close attention to keeping his animated voice alive throughout the pages of this book. She has combined her training in cultural history with her culinary background, growing up in a "farm-to-table" family when gardening and cooking were simply ways of life.
Valter is a lifelong culinary artist and expert restaurateur whose life story takes him from Monte San Savino, Italy (his childhood home) to Salt Lake City, Utah, where he serves personalized Tuscan-Italian cuisine at his restaurant, Valter's Osteria. His journey in between includes restaurant experiences at Porto Cervo, Gstaad, the International Club in Nairobi, and Il Nido and Castellano's in New York City. His move to Salt Lake City coincided with the city's restaurant revolution, and one might say he helped make that transformation possible.
